In a large skillet, heat oil over medium heat. Add mushrooms first, and sauce until just tender, 4-5 minutes. Add shallot and other veggies. Season with salt and pepper and stir often. Lower heat and take your time, cook about 5 minutes until al dente, or just fork tender.Roast for 30 - 35 minutes until the vegetables are soft, but starting to crisp. While the veggies are cooking, melt together the butter and syrup. Whisk to combine. Remove the veggies from the oven and drizzle with half of the glaze.
